Smash Burger Tacos
These are an all time favorite at my house. They’re a high protein twist on a classic burger! I don’t know about you but burger bowls can get old fast for me, and seem kinda boring! These tacos have crispy smashed beef, melty cheese, fresh lettuce, pickles, and a creamy homemade burger sauce all wrapped up in a crispy tortilla. The best part? It takes 10 minutes to whip it all up. Even less if you have some help!
Ingredients
Burger Sauce
½ cup low fat cottage cheese
⅓ cup pickle juice
3 tbsp ketchup
1½ tbsp low fat mayonnaise
1 tbsp mustard
1 tbsp honey
1 tbsp kosher salt
1 tsp black pepper
Tacos
8 small corn or flour tortillas (I used siete sourdough tortillas they’re GF!)
4 oz cheese of choice, shredded or sliced
1 lb ground beef
1 tsp garlic powder
1 tsp onion powder
Salt & pepper
Shredded lettuce
Onions (I used pickled red onions)
Pickles
Directions
Make the sauce: Blend the cottage cheese, pickle juice, ketchup, mayo, mustard, honey, salt, and pepper until smooth.
Make the smash burger tacos: Divide the ground beef into 8 portions. (We measured it out to 2 or 3 ounces each taco) Spread each portion thinly over one side of a tortilla, pressing the beef firmly into the tortilla.
Heat a skillet over medium high heat. Place each tortilla beef side down in the hot skillet and press firmly with a spatula. Cook until the beef is browned and crispy, then flip.
Add the cheese and cook until melted and the tortilla is golden and crisp.
Build your tacos: Top with shredded iceberg lettuce, burger sauce, pickled onions, and chopped pickles.
ENJOY!
