Pumpkin Protein Muffins

These might be my new favorite fall muffins. They’re soft, naturally sweetened with maple syrup, packed with pumpkin and warm spices, and have a little extra protein thanks to vanilla protein powder!

Ingredients

  • 1½ cups almond flour

  • 2 scoops vanilla protein powder

  • ½ tsp salt

  • 1 tsp baking soda

  • 2½ tsp cinnamon

  • ½ tsp ground cloves

  • ¼ tsp allspice

  • 4 eggs

  • ¾ cup pumpkin purée

  • 1/3 pure maple syrup or honey

  • 1 tsp vanilla extract

  • Optional: chocolate chips

Instructions

  1. Preheat oven to 350°F.

  2. In a large bowl, whisk together the almond flour, protein powder, salt, baking soda, cinnamon, cloves, and allspice.

  3. In a separate bowl, whisk together the eggs, pumpkin, maple syrup, honey, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Don’t overmix.

  5. If using, gently fold in chocolate chips.

  6. Divide the batter evenly between 12 muffin cups.

  7. Bake at 350°F for 15–20 minutes, or until the muffins are set and a toothpick inserted into the center comes out clean.

  8. Let cool for a few minutes before enjoying! We love to let these cool for a while before eating, the flavor seems stronger!

A little note:

The original recipe calls for ⅓ cup maple syrup, but we ran out while making these! We used half maple syrup and half honey, which ended up being the perfect amount of sweetness, either & both work!
