Cozy Chicken Minestrone Soup
There’s nothing better than a cozy bowl of soup when you want something comforting, nourishing, and easy to throw together. This chicken minestrone is one of those recipes I keep coming back to! It’s loaded with vegetables, tender chicken, northern beans, and just enough bacon to add a little extra flavor. It’s hearty without feeling heavy and makes the perfect simple weeknight dinner!
Ingredients
2 slices bacon, chopped
½ small yellow onion, diced
1 cup celery stalk, diced
1 cup carrots, diced
1 cup zucchini, diced
2 cloves garlic, minced
1 tbsp tomato paste
1 (14 oz) can diced tomatoes (you can also blend these for more of a tomato soup feel! I personally don’t LOVE tomatoes so blending them is my fav. We have even just added some marinara sauce and that worked great!)
2 cups chicken broth
½ can northern beans, drained and rinsed
2 cups cooked chicken, shredded or chopped
½ tsp salt
¼ tsp black pepper
Olive oil spray, as needed
Instructions
Cook the bacon in a large pot over medium heat until crispy. Remove and set aside.
Add the onion, celery, and carrot to the pot. Cook for 5–7 minutes, until the vegetables begin to soften.
Add the zucchini and garlic and cook for 1–2 minutes.
Stir in the tomato paste and basil and cook for about 30 seconds.
Add the diced tomatoes, chicken broth, northern beans, salt, and pepper. Bring to a gentle boil.
Reduce the heat and simmer for 10–15 minutes, until the vegetables are tender.
Stir in the cooked chicken and bacon. Simmer for another 2–3 minutes, then serve warm.
*This makes 3 servings, so I suggest doubling it for meal prep or for a family!
